Joe’s Breakfast Tacos

This is to make 3 tacos (one big portion). Scale as needed.

  • 2 Eggs large
  • Bacon or Sausage or Chorizo (optional)
  • Pepper jack (or other cheese)
  • Onion (1 tablespoon, finely diced)
  • Chili pepper (optional, 1 teaspoon or more, finely diced)
  • Salsa or Sriracha sauce
  • 3 Soft corn tortillas taco size
  • Shredded cabbage
  • Salt pepper

One completely done, one without sauce, one without cabbage and sauce

Cook the bacon or sausage if using. Beat the eggs in a bowl and add 1-1.5 teaspoons of water per egg. In a non-stick pan, add a little oil and on a medium heat add onion and chili. Fry for a few minutes. Add some salt and pepper to the beaten egg and stir quickly just before pouring into the pan with sauteed onion. Scramble the eggs with the veg until almost done and remove from heat.

Prepare the corn tortillas by wrapping then in a wet paper towel and microwaving for 15-45 second depending on how many you are heating up. When they are hot, lay them out and immediately put some shredded cheese on top. Sometime I put the plate back in the microwave for another 10-15 seconds to melt the cheese. Next, for each tortilla, put the meat on top of the cheese, put 1/3 of the scramble on top of the meat, put some shredded cabbage on top of the egg, put some salsa or Sriracha on top of the cabbage. Eat.
